Chapter 12 - Getting Started in the Kitchen

You do not have to have cooking skills to satisfy hunger.  You can eat convenience foods that require little or no preparation.  However, you can add unlimited variety and interest to meals when you know how to prepare foods from scratch.

Before you can begin working in the kitchen, you need to have some basic knowledge and food preparation skills.  You need to know how to read a recipe and measure ingredients.  You also need to be able to plan your use of time in the kitchen.

To prepare meals, you need to know how to choose and read recipes.  You need to be familiar with abbreviations and cooking terms used in recipes.  If you live in a high-altitude area, you should be aware of how the atmospheric pressure can affect food products.  You should also know the correct way to measure dry and liquid ingredients and fats.

Knowing how to adjust recipes is another basic food preparation skill.  Being familiar with measuring equivalents will help you easily adjust the yield of a recipe.  Following a few guidelines can help you adjust conventional recipes for microwave cooking.  Knowing how to substitute one ingredient for another

As a meal manager, you will need to know how to make a time-work schedule.  This will help you plan your use of time in the kitchen.  It will also help you when working with others, such as in a school foods lab.

You can put basic cooking skills to use when preparing simple recipes.  Sandwiches are a good food for beginning cooks to make.  Using a variety of ingredients, you can easily prepare many different hot and cold sandwiches.  Sandwich recipes also adapt easily to microwave preparation.
