Ch. 5 Safeguarding the Family's Health

Sanitation and safety in the kitchen are keys to good health.  Improper food handling can make you ill.  Kitchen accidents can cause severe injuries.  You can prevent both illness and accidents by following sanitation and safety principles.

SUMMARY

Food-borne illnesses are extremely common in the United States.  Bacteria cause many of them.  However, people are often responsible for spreading the bacteria.  Most symptoms of food-borne illnesses affect the digestive system and last only a few days.  However, food-borne illnesses can be deadly.

Maintaining high standards of personal and kitchen cleanliness while preparing foods is your key defense against food-borne illnesses.  You need to handle food carefully and store it properly.  You need to take special precautions when cooking for a large group or transporting food.  You also need to be wary when you are eating in restaurants to avoid the risk of illness.

Exercising safety is another concern when you are working in the kitchen.  Many kitchen injuries are the result of poisonings, cuts, burns, falls, shock, and choking.  Even common items like cabinet doors and aerosol cans can present dangers if you are not careful.
