Welcome, The Culinary Arts program at Virginia Randolph Community High School offers students the opportunity to become an independent adult and a productive wage earner. In order to be successful in Culinary Arts the student must be willing to work with their hand and apply critical think skills. Setting goals and following instructions are important traits for the students both in school and on the job. Students become members of the Culinary Arts family with membership in FHA/HERO. They work together in support of the school and community service projects. They also have the opportunity to enter in the State FHA/HERO Culinary competition. The Culinary Arts Students take several classes during the time they are enrolled at VRCHS. Class 101 - Intro to Foods includes personal health and safety, fire safety, first aid, sanitation and personal hygiene Topics: Topics to be taught during this nine-weeks of instruction will include safety and sanitation in: *personal health and alertness *thinking safety (slips and falls, cuts, burns and scalds, and strain) *first aid *fire safety *fire prevention *sanitation *personal hygiene Instructional Philosophy: Each student is expected to do the best they possible can in written and hands on work. They are expected to behave in a manner which will allow each individual to obtain their personal goals. With the help of the instructor, each student is expected to reach their goals, and to become a responsible, productive individual. Students will work to master given basic competencies in the classroom and the lab. In the lab students will learn to perform their jobs in a manner consistent with the expectations of the workplace. Classroom work is always designed to support and to enhance the lab work. Students will be required to keep all work in a notebook. Required emphasis will be on reading, writing, researching and orally present in information needed for a successful career in Culinary Arts. Students will learn to use the mathematics of the food service industry and develop their critical thinking skills. Student Learning Goals: Students will be able to: *tell how your health affects your safety at work. *identify the things your body needs for good health *tell why your body needs energy and where to get it from *tell what a balanced diet includes and identify the basic food groups *explain why sleep and exercise are important to maintain your health *explain why it is important to have a healthy attitude toward your work *tell how to dress with safety in mind *explain the importance of following directions at the workplace. *identify possible hazards in a food service kitchen *explain how team work contributes to safety *tell where falls are most likely to occur in a food service operations *tell who is responsible for cleaning up spills at work *identity ways of practicing knife safety in the kitchen and dining area *explain what makes a fire burn *identify the different types of fires and tell the proper way to put out each type * identify ways that fires can start in a food service operation *tell how to prevent food service fires *explain why sanitation is so important in the food service industry *tell how cleanliness affects a restaurant’s business *list ways that food service workers can contaminate food *tell what personal hygiene practice food service id workers should follow at home and work *describe the sanitary way to taste food that is being prepared Major Course Projects and Plan for Instructional Delivery: Instructional delivery will be in the following manner: ® lectures ® filmstrips ® written -worksheets -test and quizzes -research/ technology projects and reports *careers *safety *sanitation *OSHA Assessment Plan: Students will be graded in the following manner: 30% Daily Participation 20% Classwork/homework 10% Lab assignments 20% Test and Quizzes 20% 9-week exam Tutoring is available to all students on Tuesday, and Thursday from 3:00 p.m. to 4:30 p.m., with transportation provided. Individual students may receive one on one tutoring from teacher during duty period and/or adult volunteer from the community.
