Welcome to the final examination page of the MMS Nutrition class at NSU. This final examination is in two parts.  You may attempt the two parts independently and in any order.  Please be sure to follow the instructions your recieved for returning the examination to the program.  All components of the exam must be complete within one week of obtaining the exam.

Part #1:  The link below will guide you to the online 100 questions final examination section I.  This can be printed for convenience and revisited for answer entry.  There are several question types and the material comes from your reading and video lecture materials. Upon entry and submission of the answers to these questions, please let the instructor know you have submitted the examination.

Part #2:  Assess the following patient and write a recommendation for nutrition counseling based on the knowledge gained from your reading.  Be as complete as necessary to address the issues presented.

Case: 

PROBLEM: Consider the case of Mr and Mrs Hunt. Mr. and Mrs. Hunt are both 28 years of age and married for 1.5 years. They both are career workers and have no children by choice.  Both work many long hours. Neither Mr nor Mrs Hunt are very careful about what they eat.

Monday through Saturday they often skip breakfast or if there's time, they'll fry some food left over from the day before. At lunch Mrs Hunt eats a simple meal usually including some rice and some beef or chicken.  She often follows the meal with something sweet like cookies, cake or ice cream on the way back to the office.  Mr. Hunt's lunch is usually a hamburger or fried chicken or fried fish from the local fast food operation.

Both the Hunts' work late and they often eat dinner alone during the week.  Mrs. Hunt enjoys light snack foods and sandwiches for lunch.  Often this includes cheese or eggs and butter or margarine on bread. Mr. Hunt usually comes home the latest and often will bring home and share "fast food" with Mrs. Hunt.  They like pizza, take out Chinese food, and Taco Bell. 

Mr and Mrs Hunt are seeing you today to get your advice about their unbalanced diets. Since there are several food categories missing from their daily food intake, you need to explain what kinds of vitamins and other nutrition they need and why. Further, there are early signs that they are not in perfect health. Mr Hunt has high blood pressure and occasionally experiences angina chest pains. He tells you he has no opportunity to do regular exercise, and you observe that he is a heavy smoker, as well. Mr M has low levels of HDL but his LDL level is 170.

Mrs Hunt, on the other hand, has both high HDL and LDL levels; her LDL is 165. Mrs Hunt is more concerned about her appearance than her health. She cannot understand, for example, why she is 23 pounds overweight, since she eats only two meals a day. But even if she continues with her dietary pattern and her lack of exercise, she does not think she will gain more weight. (She tells you that most women in her family are thin, but, more important, you also learn that several aunts and her mother have developed complications with various cancers, including cancer of the breast.)

With regard to their daily eating habits, both Mr and Mrs Hunt need good information about what and how to change and they need to be educated about why these changes are important. Several issues are common problems for both these patients, but there are also specific risks for Mr M and other risks for Mrs M. Please help them to better understand what they must do to improve their prospects for a healthier future.
