It is permissible to pick through the beans (to remove the husks), but not if its only on the surface of the bin, becasue that is like 'stealing the eye' (which is like deceiving one's eyes), and it will look to others as if it is completely clear. It is also possible for the shopkeeper to distribute sweetened grains (like candy) and nuts to children, in order to accustom them to coming to his store; and he may discount prices from the market's average price in order to increase the customers, and the other business people cannot prevent him. And there is no gneivat daat in this.
