Chapter 01: Organization and Structure
This chapter describes various hotel types, and lists the services to be found in services found in world-class service properties, in hotels that offer mid-range service, and in economy/limited service hotels. Students should be able to:
• Identify the advantages and disadvantages of independent hotel ownership
• Identify the advantages and disadvantages of chain ownership
• Describe how management contracts are implemented
• Explain how franchises and referral groups work
and
• Create an organization chart
• Classify functional areas by revenue or support centers
• Classify functional areas by front-of-the-house and back-of-the-house
